If you’re looking for a creamy, yet fresh-tasting accompaniment for a party tray or just a quick snack, this dip fits the bill. Clean, bright cucumber and scallions combined with smooth cream cheese make a tasty concoction that’s great with fresh veggies or your favorite cracker. It would even make a nice spread on a sandwich.
It makes about ten 120-calorie quarter-cup servings (using 1/3-fat cream cheese) for under $7.00, but the best part about this recipe is that it only takes about five minutes to prepare.
Here’s what you’ll need:
- 2 cucumbers
- 2 scallions
- 2 8-ounce packages 1/3-fat cream cheese, softened
- garlic salt to taste
- a blender or food processor
- cheesecloth or fine-mesh strainer
- 1/4-1/2 c. water

First, cut your cucumbers into quarters, lengthwise, to better fit into your blender/food processor. Add the cukes and scallions in your machine with 1/4-1/2 cup of water. Blend/process until smooth.
Next is the hardest part, straining out all the water. Pour the cucumber/scallion mix into a cheesecloth or fine strainer. Press or squeeze out all of the water you can.
Finally, stir the veggie puree into the cream cheese and add garlic salt to taste. You can serve it immediately, but the flavors really meld after 20-30 minutes in the fridge.
