The first time a friend told me about this Watermelon, Cucumber, & Feta Salad, my immediate reaction was… well… let’s go with not favorable. But once I gave it a moment’s thought, I knew I had to try it. All of the ingredients are things I love, and, while it seemed incongruous at first, I knew this salad would be a new favorite of mine. It screams, “Summertime!” with sweet watermelon, crisp cucumber, and a zing from red onion. All of which goes wonderfully with creamy chunks of salty feta cheese. A simple, tangy dressing of lime juice and honey marries everything together for a delicious, quirky salad perfect for any summer table.
Here’s what you’ll need:
- 2-3 c. diced watermelon
- 1/2 to 1 c. cucumber, quartered lengthwise and sliced
- 1/4 c. red onion, sliced thinly
- 1/2 c. feta cheese, crumbled
- 3-4 T. fresh lime juice
- 2-3 T. honey
- Pinch of salt
As you might have guessed, this is super simple. Whisk together the lime juice and, honey, and a pinch of salt. Add the red onion, whisk to coat, and set aside. Combine all the remaining ingredients in a large bowl, add the dressing and onions, and toss to combine. Refrigerate until serving. Top your Watermelon, Cucumber, & Feta Salad with a grilled chicken breast for a complete meal.
