Maria, please educate yourself on phytonutrients and insulin. The internet is too full of ideas that run counter to the clickbait you saw on Facebook to let yourself fall into that rabbit hole.

Here's a simple result from looking at the old google, courtesy of an actual nutritionist and Assistant Professor of Public Health Nutrition at Oklahoma State University.
https://www.realclearscience.com/articles/2021/01/13/anti-nutrients_arent_as_bad_as_they_sound_656323.html

Here's a gov study on insulin, and I think looking into the effects of high-glycemic (potatoes, cereals, breads, pasta) vs low-glycemic carbs (berries, fruits, lentils, barley) might reverse your previous understanding.
https://clinicaltrials.gov/ct2/show/NCT00874341

In lieu of a second fermentation gut, you could consume fermented vegetables and products like kimchi, sauerkraut, kombucha, sourdough, etc... though I think you should be aware that animals have a fermentation gut or eat their feces to get Vitamin B-12 (a bacteria), not due to fatty acids. Fermented foods are wonderful for your health, and for your insulin since you seem concerned about that.

Always educate yourself before providing an opinion as fact.

This sounds great, but low cholesterol is actually associated with higher mortality.

A vegetarian lifestyle sounds great, but since plants are filled with anti-nutrients ( to defend themselves) I don't think it should be all what humans eat. Plus, mammals who don't have a separate stomach to ferment the vegetables and transform it into fatty acids end up eating their own poop, see chimps. And finally, insulin is the fat storing hormone, it gets spiked the most by grains, fruits and vegetables. Now if I would like to get fat, all I would have to do is add a few slices of bread to my day or add a few fruits as a dessert.

You can learn more about plant antinutrients on here :
https://www.nature.com/scitable/knowledge/library/plant-resistance-against-herbivory-96675700/

Also, I recommend you to do some reading on how insulin works. I'm saying this from a place of empathy, I've tried several diets myself.

After 4 months of eating meat free I lost 30 lbs, dropped my total cholesterol by 15% and my bad cholesterol by 20%. I feel lighter in my gut, don't have diarrhea, constipation, cramps or heartburn or acid reflux. I added exercise and can now jog 5 miles without losing my breath. That's a big difference for someone who is 49 years old. (Anthony Okrongly - the author)

Great article Anthony, thanks! We've been "vegan+" (WFPB) for about a year now. It can be a struggle at times when non-vegans come to visit, but largely it works out good. No one has ever starved at our table ;)' Thanks!
